MAKE-AHEAD MIX OF THE WEEK

Scone Mix


8 cups flour

1 cup sugar or equivalent

1 cup dry milk powder

4 tablespoons baking powder

2 teaspoons cinnamon

1 teaspoon salt

Mix dry ingredients in a large container.

1 1/3 cups shelf-stable  shortening such as Crisco 

Cut in shortening until mix is mealy. Then fold in

3 cups raisins

This is enough for four batches of scones. Divide mix evenly into four bags and keep cool and dry up to six months. 

To proceed:

Beat 1 egg with ½ cup water and mix in 3 cups scone mix. On a floured cloth or board, knead dough 6 times. Do not over-knead. Form two mounds. Score into six wedges. Bake 20-25 minutes at 400 F. Serve hot. 


CAMPING & RV RECIPE OF THE WEEK

Coffee Coffee Cake 

No mixer needed. Use a whisk to make this moist, flavorful, simple coffee-flavor  cake in minutes. Use regular or decaf instant  coffee.


½ cup vegetable oil

8-ounce carton coffee flavor yogurt (1 cup) 

4 eggs

1 box yellow cake mix

1  cup brown sugar

1 teaspoons cinnamon

1 teaspoon instant coffee


Preheat the oven to 350 degrees. Grease a 9 X 13-inch baking pan. Whisk oil, yogurt and eggs until well blended. Stir in cake mix until everything is evenly wet. Mix brown sugar and cinnamon.

Pour half the  batter into the pan. Sprinkle  with half the sugar and cinnamon. Add remaining batter and sprinkle top with remaining sugar and cinnamon. . 

 Bake 35-40 minutes or until the cake is firm and springy to the touch. Cool and cut in squares.

Cracker Pancakes

No time to make real pancakes? Let saltines do the work for you. Is this the craziest idea yet? Try it and see.

1 sleeve  low-sodium saltine crackers 

1 sleeve regular saltine crackers

1 to 2 cups water

2 eggs 

1 to 3 teaspoons sugar (optional)

1 teaspoon flavoring such as vanilla or almond extract

Butter or vegetable oil for frying

Put crackers in a plastic bag and smoosh them. Add enough water to soak crackers.  Seal bag and turn over several times to soak crackers thoroughly. Set aside. In a bowl whisk eggs, sugar and flavoring until light.

Now that crackers are mush, punch multiple holes in the plastic bag. Squeeze bag to drain water, leaving a thick batter. Stir cracker batter into egg mixture. Heat butter or vegetable oil and cook “batter” as for pancakes.  Serve with syrup as for pancakes.

Variation: Make pancakes savory instead of sweet. Omit flavoring and sugar. Stir finely cut scallions into the mix. Fry as above and serve pancakes as a starch course with meat from the grill.  Bonus points: top pancakes with gravy or cheese sauce.   


Campground Potluck Recipe of the Week

Pickled Shrimp


2 bags, 16 ounces each,  cleaned, cooked tail-off shrimp

2 lemons or limes

Medium sweet onion

1/4 cup each lemon juice, white wine vinegar, dried parsley flakes

½ cup olive or canola oil 

1 teaspoon garlic powder

1 tablespoon mixed Italian seasoning

Thaw and drain Shrimp.  Cut lemons or limes in thin wedges. Peel onion and cut it in crescents. Put in a seal-able bag.  In a bowl whisk lemon juice, vinegar, parsley flakes, oil, garlic and seasoning. Pour over shrimp. Seal bag and refrigerate or keep in a well-chilled ice chest several hours or overnight. 

Punch holes in the plastic bag to drain shrimp well. Put shrimp in a serving bowl and discard plastic bag. Provide small skewers or large toothpicks for self-serve.  

Cook’s note: Don’t drain oily marinade into your RV plumbing, which is bad for the pipes and sensors,  or into the ground, which is illegal.  Use a trash bag. 


Tips for the Camp Cook 

* When your white drinking water hose springs a leak, cut it up for many uses. Strong and leathery, it can make  protective sheaths for the ice pick, knives, saw blades, scissors. Slit hose and slip  over ropes and cords  as a chafe guard. Split hose and wrap around  handles, such as the bucket bail, for a softer grip. Fasten a length of hose  over the end of a funnel when you need an extension.  It’s strong, so the flat hose also makes a good replacement for broken webbing in outdoor chairs

When this white, drinking water-safe hose gets grotty, soak in a bleach solution to clean it inside and out.

FREEZE AHEAD RECIPE OF THE WEEK


Mama Mia 

Meat Sauce

A solid brick of this compact meat mixture is thawed in camp, then expanded later in camp by the addition of tomatoes.

! ½ pound each bulk Italian sausage and ground beef

1 tablespoon vegetable oil

2 large onions, diced

6-ounce package pepperoni, chopped

1 tablespoon minced garlic

2 large carrots, grated or chopped fine

3 large ribs celery, chopped

Medium green pepper, diced fine

1 tablespoon each sugar and  Italian seasoning

½ teaspoon cinnamon

1 teaspoon each salt, pepper

1 cup water

1 chicken or beef bouillon cube

1 pint mushrooms, cut up

In a large Dutch oven, fry out sausage and beef over high heat, breaking it up into crumbles. Keep stir frying while adding remaining ingredients. Simmer until vegetables are tender. Cool mixture and freeze in two-cup bricks. In camp, thaw mixture and heat with a 14-ounce can of diced tomatoes. Serve on 4 to 6 portions of pasta.
